This year we produced some special edition cheeses in collaboration with Boškinac hotel and winery on Pag.
Boškinac is renowned for producing the finest Croatian wines such as Gegic and Grand Curvee, which is the perfect partner for our Paški Sir. Shortly after harvest time we take the young wine (must, or mošta in Croatian) containing pressed grape skins which is highly alcoholic and full of the goodness of the land. We then submerge our young cheese inside for around 2 months.
A further period of aging is then required before we seal the cheese to lock in the unique taste. The result, some exceptional looking cheese with rich aroma and taste. Pijani Sir, or Drunken Cheese.
